Quercetin is one of the thousands of phytochemicals or phenolic compounds that occur naturally in a variety of plants. It is widely classified as a flavonoid, and more specifically as a flavonol. All phenolic compounds contain at least one aromatic ring with one or more hydroxyl groups. Flavonols, not to be confused with flavanols, have a double bond between C2 and C3 and a ketone group at C4. Based on Level B evidence of possible interactions (non-randomized clinical trials), caution should be exercised when combining quercetin with certain prescription drugs. Large amounts of dietary quercetin have not been associated with any adverse effects, which may be due to low bioavailability in food and rapid metabolism and elimination.
